The pancreas is a compound gland made up primarily of clusters of exocrince cells in arrangements called acini (sig. acinus; a reference to a cluster of grapes). These acinar cells produce and secrete digestive enzymes. The dark staining in the cytoplasm reflects the large amount of rough endoplasmic reticulum (and associated ribosomes and rRNA) found in these little protein factories.
