DS to offer more local fruits and vegetables

Dining Services has made a major step in sourcing more local items for use in Concordia’s dining facilities. Dining Services is now working with Bix Produce to procure fresh fruits and vegetables. Bix is based out of the Twin Cities and works with 19 farms throughout Minnesota and Wisconsin to bring food from farmers to restaurants including Anderson Commons and The Maize.

Local fruits and vegetables will be offered in Anderson Commons and The Maize when they are in season and available. Local products may include items like apples, beans, corn, squash, tomatoes, carrots, cabbage, cucumbers and more.

One of the family farms that will supply corn, cucumbers, cabbage, squash, peppers and pumpkins to Concordia is Svihel Vegetable Farm in Foley, Minnesota, only 185 miles from Concordia’s campus. This 180 acre farm is Food Alliance Certified because John Svihel grows his crops with minimal environmental impact producing eco-friendly products.

New local items will be featured while continuing to offer the consistent local items including: pasta from North Dakota, chicken breasts from St. Cloud, bread from North Dakota, honey from Moorhead, wild rice from Red Lake Nation, Minn and fresh potatoes from Moorhead.
