Digging for Sustainability
Maddie Hyde ‘16, Fargo, N.D., and John Stelter ’15, Plymouth, Minn., are spending their summer digging in the dirt.
As interns of Concordia’s organic garden, the two are working to maintain the garden during its summer operation.
The garden, located east of the soccer practice fields, provides a diverse selection of vegetables and herbs for Concordia Dining Services, Concordia Farmers Markets and the community at large.
The mission of the garden is to educate the community about food production that is healthy, environmentally sustainable and encourages a reduction in our global footprint.
