Educational Background
Concordia College provides a Didactic Program in Dietetics that is approved by the Academy of Nutrition and Dietetics. Approximately 12 students graduate each year and continue their education in Academy of Nutrition and Dietetics internships or approved practice programs. Larson teaches the nutrition courses for this program including: normal nutrition, community nutrition, advanced nutrition,clinical nutrition, nutrition education and clinical experience.
Larson has a special interest in leading student groups to Europe on a May Seminar.

- Dietetic Internship at St. Mary's Hospital in Rochester, Minn., in l972

- Doctor of Education in education from the University of North Dakota, Grand Forks, in l989
- Professor and Director of the Didactic Program in Dietetics at Concordia College, l974-l978 and l982-present
- Clinical dietitian at Fargo Veteran's Administration Hospital in Fargo, N.D., l978-l980

- Appointed by the Governor of North Dakota to the North Dakota Board of Dietetic Practice for 2005-2007, 2007-2010
- Awarded the Outstanding Dietitian in North Dakota by the North Dakota Dietetic Association, 2005
- Collaborative Research Award by Ohio State School of Allied Medical Professions, 1989
- Academy of Nutrition and Dietetics Recognition of Service Award, 1993
- Recognized Young Dietitian in North Dakota, 1979
